Ingredients:
- ¼ pound boneless beef, such as flank steak, tri-tip, or sirloin, thinly sliced
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- ½ teaspoon black pepper
- ½ teaspoon sugar
- ½ pound asparagus
- 2 tablespoons vegetable oil
- 1I tablespoon chopped garlic
- 2 tablespoons water
- 2 tablespoons thinly sliced green onion
Directions:
In a medium bowl, combine the beef with 1 tablespoon of the fish sauce, the soy sauce, black pepper, and sugar, and toss to mix well. Set aside for 15 to 20 minutes while you prepare the remaining ingredients.
Trim the asparagus, breaking off the grayish base of each stalk, and cutting the green upper portion diagonally into 2-inch lengths. You should have about 2 cups of chopped or sliced vegetables. Set aside.
In a large skillet, heat the oil over high heat for 30 seconds. Add the garlic, toss well, and then scatter the beef in the pan. Cook briefly on one side, then toss once to sear the other side. Add the asparagus and toss well. Add the remaining tablespoon of fish sauce, the water, and the green onion. Cook, tossing once or twice, until the asparagus is shiny and tender, but not soft, about 1 minute. Transfer to a serving dish and serve hot or warm.
