Ingredients:
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 2 tablespoons sugar
- 1 tablespoon Caramel Sauce or brown sugar
- 1 tablespoon vegetable oil
- 1 tablespoon garlic
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 to 6 bone-in pork chops (about 2 pounds)
- VietNamese dipping sauce (nuoc mam cham)
Directions:
To make a marinade for the pork chops, combine the fish sauce, soy sauce, sugar, Caramel Sauce, oil, garlic, salt, and pepper in a food processor or blender and process until you have a fairly smooth sauce. Combine the marinade with the pork chops in a medium bowl, and turn the chops to coat them evenly. Set aside for 30 minutes to 1 hour, or cover and chill for up to 1 day.
To cook the pork chops, preheat a gas grill, or preheat the oven to 400F. Place the chops on the hot grill and cook until nicely browned and cooked through, turning once or twice. Or roast in the oven until done. Transfer the pork chops to a serving platter and serve whole or let stand on a cutting board for 10 to 15 minutes, and then cut into strips. Serve hot, warm, or at room temperature.
