Ingredients:
- ½ pound boneless pork, thinly sliced
- 3 tablespoons fish sauce
- 3 tablespoons water
- 2 tablespoons sugar
- 1 tablespoon Caramel Sauce or brown sugar
- ½ teaspoon black pepper
Directions:
In a small saucepan or a clay pot, combine the pork, fish sauce, water, sugar, and Caramel Sauce, stir well, and bring to a gentle boil over medium-high heat. Adjust the heat to maintain a simmer and cook, stirring often, for 8 to 10 minutes. The sauce should be filled caramel-colored bubbles blooming among the pork pieces, and the pork should take on a shiny, caramel hue as it cooks through.
When the pork is cooked and the sauce is satiny, remove from the heat and stir in the pepper. Transfer to a small serving dish and serve hot, warm, or at room temperature, ideally with lots of rice.
